Salt-Crusted Sea Bream

Try this simple yet impressive salt-crusted sea bream recipe. The fish is stuffed with lemon and herbs, encased in a salt and egg mixture, and baked to perfection. A spectacular way to preserve the natural juiciness of the fish and wow your guests!

Ingredients: 

  • 1kg rock salt
  • 1 sea bream
  • 2 eggs
  • 1/2 lemon
  • Thyme and rosemary

Instructions:

1. Preparation:

  • Place the lemon and herbs inside the belly of the sea bream.
  • In a bowl, combine the rock salt, thyme, rosemary, and grated lemon peel.
  • Add the egg yolks to the mixture and mix everything together.

2. Assembling the Brick:

  • Place your sea bream in the brick.
  • Completely cover the sea bream with the salt paste mixture.

3. Final Cooking:

  • Preheat the oven to 180°C.
  • Cook the fish for about 20 minutes without the lid. The salt paste should turn golden and hard. You can test it by tapping it with a spoon.
  • Once cooked, crack open the salt paste and your sea bream will be perfectly cooked.
